Boka Bay food and dishes from the rest of Montenegro
Herceg Novi belongs to the cuisine of Boka Bay and the Montenegrin coast. A local order therefore starts with sea fish, shellfish, cuttlefish, octopus, chard, olives and olive oil. Njeguši prosciutto, kačamak, cicvara, lamb and veal cooked under a sač are also served in town, but they represent the mountain and inland cooking of Montenegro. Burek and grilled meats belong to everyday Balkan food. This distinction matters when you want one meal to tell you something specific about Herceg Novi and the bay.
Fish of the day grilled or cooked lešo
Sea bass, sea bream, dentex, red mullet, sardines or another fish from the daily catch may be grilled with olive oil, garlic, parsley and lemon. Grilling gives the skin and edges a roasted aroma, while lešo fish is milder and softer because it is gently boiled with potatoes and vegetables. Chard with potatoes is the usual side for both. The species depends on the catch, so look at the day's selection before choosing the cooking method.

02Risotto, brodet, buzara and seafood
Black risotto, brodet and buzara use the same basic seafood ingredients but produce very different flavors and textures.

Black risotto, fish soup and brodet
Black risotto gets its color and flavor from cuttlefish ink. The rice should remain creamy and the pieces of cuttlefish should still have some texture. Fish soup is a lighter opening course, while brodet is a main dish in which fish is slowly simmered with onion, tomato, wine and olive oil, usually with polenta. Choose black risotto for a full seafood rice dish and brodet when you want fish in a thick, aromatic sauce.
Mussels in white or red buzara
White buzara combines mussels with wine, garlic, parsley and olive oil. The red version adds tomato, which makes the sauce fuller and sweeter. Bread is used to pick up the sauce left in the pot. Choose white buzara when you want the shellfish to remain the main flavor and red when you prefer a stronger tomato sauce. If you avoid gluten, ask whether breadcrumbs are used to thicken it.
Octopus, squid and cuttlefish
Octopus is commonly served cold with potato, parsley, olive oil and lemon or vinegar. Squid comes grilled or fried, while cuttlefish gives black risotto and black pasta their characteristic color and marine flavor. Octopus salad works as a cold starter, grilled squid as a lighter main course, while fried squid has a crisp coating and richer taste. The cooking method tells you more than a long seafood list on the menu.

The mimosa, fish and wine feast
During the Mimosa Festival, the Herceg Novi Riviera hosts a feast dedicated to mimosa, fish and wine. Small fish are simply prepared and served with wine, music and the flowers that gave the festival its name. The feast takes place in winter, before the summer season, with simply prepared fish at the center of the food program.

Wine from the vineyard at Savina
Beside Savina Monastery, Castel Savina maintains a vineyard and winery with about two hectares of vines. Its collection includes Chardonnay, Chardonnay Barrique, Rosé Grenache, Castello, Merlot, Cabernet Sauvignon and a late-harvest wine made from the indigenous Žižak grape. Chardonnay and rosé suit fish, buzara and octopus salad, while Merlot and Cabernet Sauvignon work better with prosciutto, cheese and meat dishes. Žižak has pronounced honeyed and fruit notes, making it a better match for mature cheese or dessert. Winery visits must be arranged in advance.
04Market produce, seasons and meat-free food
The city market brings the fish hall and seasonal produce together, while chard, vegetables, olives, cheese and priganice broaden the meat-free choice.

The city produce and fish market
Herceg Novi City Market is an everyday shopping market with 66 produce stalls, a separate dairy section and a dedicated fish hall. Look for seasonal fruit, vegetables, olives and cheese at the produce stalls, then check which fish are available that day. If you are cooking in an apartment, plan the meal around the season and the daily catch.

Citrus fruit, figs, olives and produce from the hinterland
The mild climate supports oranges, mandarins, lemons, figs, pomegranates, grapes, tomatoes and peppers, but the selection changes through the year. Honey, cheese, olive oil, juice, wine and rakija are produced in the Herceg Novi hinterland. At the market, start with fruit and vegetables that are in season, and choose honey, cheese, oil and rakija with a clearly named origin and producer.
Meat-free coastal dishes
Chard with potatoes, grilled vegetables, olives, seasonal salads, cheese, bread and priganice can form a meat-free meal. Kačamak and cicvara are also made without meat, but belong to mountain cooking and contain cheese, kajmak or other dairy products. Vegetable risotto or pasta may be cooked with fish stock, while raštan and beans may contain cured meat. If you eat neither meat nor fish, check the stock and cooking method before ordering.
Before booking, compare the rental price, deposit rules, luggage space, and exact pickup location.
Grilling and poaching reveal the fish itself, buzara emphasizes shellfish and sauce, and black risotto and brodet bring deeper, fuller flavors of the sea.
Grilled fish develops a seared surface and olive-oil aroma, while poached fish stays softer and milder with potato and chard.
The white version combines wine, garlic and parsley, while the red adds tomato and a thicker sauce for bread.
Black risotto gets its colour and marine flavor from cuttlefish, while brodet combines several kinds of fish in a thick sauce.
